Whole Wheat Oat Soda Bread

  • 1 1/4 cup rolled oats

  • 2/3 cup raisins

  • 1/3 tsp sea salt

  • zest of one small lemon

  • 1/2 cup plus 2 Tbsp buttermilk

  • 2 Tbsp. molasses

  • 3/4 cup whole wheat flour

  • 3/4 tsp. baking soda

Stir rolled oats and raisins along with sea salt and grated zest of one small lemon into the buttermilk. Add 2 molasses and stir until just incorporated. Leave covered in a bowl in the fridge over night.

In the morning preheat oven to 400 F degrees. in a small bowl stir together whole wheat flour and baking soda. Stir the flour into the wet oat mixture and turn the mixture on to the counter with your hands gather the dough together knead it slightly while forming into a round.

Place the loaf on a parchment lined baking sheet and score the top with an x using a sharp knife. Bake for 25-30 mins. Serve with lots of good butter or hard cheese. It makes great toast.
