Pavlova with summer berries or peaches
175 ml egg whites
pinch salt
12 oz sugar
4 tsp cornstarch
1/2 tsp vanilla
2 tsp vinegar
Whipped cream
Berries of your choice or Ripe peeled peaches
Caramel sauce
Beat egg whites with pinch of salt until you have soft peaks. Meanwhile sift the sugar and cornstarch together. Gradually add the sugar mixture to the beaten egg whites add the vinegar and the vanilla . Once the whites are glossy, mound the meringue on to a baking sheet lined with parchment in individual nests about 3 Tbsp. each—make a little indent in the centre of each mound.
Bake 250 for 1hr.
Softly whip the cream with 1 tsp of almond extract.
Cut the peaches into 1/8th’s toss with lemon juice and honey.
Place the meringues with on individual place fill with cream top with the peach slices drizzle with caramel sprinkle with sea salt flakes and serve.
