Valrhona Molten Chocolate Cakes

Serves 4

Preheat oven to 425 (not convection)

4 oz chocolate, bittersweet -best quality possible ie Scharffenberg or Valhrona or Lindt

4 oz unsalted butter

2 eggs 

2 egg yolks

1/4 cup sugar

2 tsp flour

1/2 tsp sea salt

Melt chocolate and butter. Whisk to smooth set aside to cool.

Beat eggs and yolks until light add sugar continue beating until fluffy, mix in chocolate. Lightly stir in flour and salt. Spoon into buttered floured ramekins.

You can make these in advance (ie in the morning) and refrigerate them but make sure you take them out of the fridge 1 hour before baking them. If you make them a couple of hours before dinner just leave them out at room temp.

Bake in the oven for 7- 8 mins

Serve warm with ice cream
