Sweet Oaties


A recipe from a friend who is a great baker and was once in the  food business herself

Makes about 4 dozen 2” square cookies.

  • 1 ½ cups rolled oats

  • ¼ cup packed brown sugar

  • ¼ cup white sugar

  • ½ cup whole wheat flour

  • 1 cup unbleached all-purpose flour 

  • scant ½ tsp salt

  • ½ tsp baking soda

  • ¾ cups salted butter 

  • 2-4 Tbsp water

Preheat oven to 350 F.

Combine dry ingredients in a large bowl.  Cut in butter using a pastry cutter or your fingers.  OR us a kitchen mixer. You shouldn’t be able to see any large chunks of butter. Slowly add water beginning with 2 Tbsp.  Use only enough water to hold the batter together without being too wet.  Roll out on a lightly floured surface to about 1/8 to ¼ inch thick.  Cut into 2 inch squares.  Transfer to a parchment lined baking sheet. 

Bake 16-22 minutes, until starting to get golden brown. Cool on racks and store in airtight container.
