Peanut Butter Cookies


  • ¾ cup Butter

  • ¾ cup Brown sugar

  • ¾ cup Sugar

  • ¾ cup Peanut butter

  • 1 Egg, beaten 

  • 1 tsp. Vanilla

  • 1 ¾ cup Flour

  • ½ tsp. Soda

  • ½ tsp. Salt

  • optional: ¾ cp of bittersweet chocolate chips, callets, or chunks

Beat butter & add sugar gradually. Add the peanut butter, egg and vanilla beating after each until well combined. Sift the flour soda and salt together then beat into the other ingredients until just combined.

Add the rest of the ingredients, beating after each. Stir in chocolate here if including. Cover & chill dough 2 hrs. or overnight.  Preheat oven to 350 degrees Line 2 baking sheets with parchment. With a 1 TB ice cream scoop or spoon drop dough balls onto the prepared cookie sheets 2” apart. Press down lightly with the back of a fork.

Bake 10-12 mins until slightly golden but still soft in the centre. Remove from oven to a cooling rack. allow to cool completely if you can resist!
