Coconut Bars with Dark Chocolate Ganache
BASE
1/2 cup melted unsalted butter
1 tsp pure vanilla
2 cups. Graham cracker crumbs
2 Tb sugar
FILLING
Mix the above ingredients together and press into a 8”x 8” square pan. Bake at 350 F for 10 mins
or until the crust darkens ,cool slightly.
1 can Eagle Brand condensed milk
1 tsp vanilla
2 cups shredded unsweetened coconut
Mix together spread over the cooled base and bake at 350 for 20-30mins until slightly golden and set. Cool.
GANACHE TOPPING
1 cup heavy cream (35%)
8oz dark chocolate chopped in smallish pieces (Callebaut,,Valrhona,Lindt) best you can find—this is what makes these bars so good.
In a saucepan heat cream to boiling remove from the stove add the chocolate and let it sit so the chocolate can melt whisk until smooth. Pour on top of the bars smooth out let set before cutting up. Cut with a sharp hot knife.
