Chocolate Almond Cake
This is your dead easy go to cake when guests are coming, you need a dessert in a hurry, and it has to be chocolate. Serve it with cream, ice cream, crème anglaise, berries or sliced stone fruit in season.
½ cup softened butter
1 cup sugar
1 egg
1 tsp. almond extract
Pinch of salt
2/3 cup flour
1/3 cp sifted dark dutch cocoa
½ cup almond slivers
Preheat oven to 350
Cream butter and sugar. Add egg, almond extract and salt and mix. Fold in flour and cocoa and put in 8” buttered and floured round cake pan. Press down with fingers and top with slivered almonds.
Bake 18-20 minutes….better to undercook than overcook.
Serve with whipping cream and fresh berries.
