Breakfast Power Cookies

Wow cookies for breakfast yum.We decided that power and energy bars were replacing breakfast for so many people that we would create something made with real ingredients. Breakfast cookies are packed full of dried fruit, nuts and oatmeal are delicious to eat and  fill the energy lull. Added bonus is that they keep well  and can be frozen.

  • 2 cups unsalted butter

  • 1 1/2 cups granulated sugar

  • 1 1/2 cups golden brown sugar

  • 4 large.eggs

  • 4 cups unbleached white flour

  • 4 cups oatmeal

  • 2 tsp. sea salt

  • 1/2 tsp. baking soda

  • 1 1/2 cup dried tart cherries

  • 1 cup dried apricots chopped

  • 1 cup dried chopped apples

  • 2 cups toasted pecans

  • 1 cup prunes chopped

Preheat the oven to 350 F degrees

In a large bowl beat together the butter and sugar until light and fluffy add the eggs until well mixed together.In a separate bowl mix together the flour, oatmeal, baking soda and salt.In another bowl combine all the dried fruit and nuts.Alternately add the flour mixture and the nut mixture into the creamed butter. Drop tablespoons of the dough on to a parchment lined cookie sheet.

Bake 5 min – 7 min. until set
