Bavarian Apple Torte


Crust

  • 4 oz butter room temp

  • 1/3 cup sugar

  • 1 cup flour

Filling

  • 30 oz hard cream cheese, room temp

  • 1 cup sugar

  • 4 eggs, room temp 

  • 1tsp vanilla

  • 3 granny smith apples, peeled and cored

  • 2 Tb sugar

  •  1 tsp cinnamon

Preheat oven to 350

In a mixing bowl beat butter and sugar until well blended. Add the flour mix until the mixture comes together. Turn out on to a lightly floured counter press into a flat disc and roll out to about 11” place in the bottom of a 9” springform pan with the pastry going 2” up the sides. Place in the fridge to rest a minimum of 1 hr.

In a mixing bowl beat cream cheese until light and fluffy gradually beat in the sugar add eggs one at a time and vanilla.  Slice the apple horizontally into ¼” slices . Mix the sugar and cinnamon in a medium mixing bowl place the apple slices in and toss to coat with the cinnamon sugar. Pour the cream cheese mixture into the pastry lined springform pan place the apple slices overlapping starting from the outside edge in a circle continue with another circle inside the first one continue to cover the entire surface.

Bake 350 45 – 55mins it should be a light golden and the filling set. Cool to room temperature and refrigerate before serving.
